Grilled Cheese Sandwiches

Mexican Grilled Cheese Sandwich

2 slices whole grain bread per sandwich
Enough jalapeno cheese to cover 1 bread slice
1 slice tomato
Sour cream
Chives
Real Bacon bits

Butter one slice of bread and place it butter side down in a skillet that is heated to medium heat.
Place slice(s) of cheese on the bread.
Butter the 2nd piece of bread and place butter side up on top of the cheese.
When the bottom of the sandwich is toasted, flip the sandwich and toast the other side.

While the sandwich is toasting, mix a small bowl of sour cream with bacon bits and chopped fresh chives.

Remove the sandwich from the skillet and pull open.
Place the tomato slice on the hot cheese and close the sandwich.

Serve the sandwich with the bowl of sour cream and chives on the side for dipping. Yum!

Swiss Grilled Cheese Sandwich

2 slices of Multi-grain bread per sandwich
1 or 2 slices of Swiss cheese (choose a soft Swiss cheese).
Caramelized mushrooms

Caramelized mushrooms
Slice mushrooms (Portabella are a good choice) 1/8th inch thick.
Pour extra virgin olive oil into a skillet and heat over high heat.
When the oil starts to smoke place a single layer of mushrooms into the pan.
Cook for 2 minutes without disturbing them until they start to caramelize on the bottoms.
Turn mushrooms and cook for about 5 minutes.
Remove from heat and set aside while you prepare the sandwich.

Place slice(s) of Swiss cheese on the bread.
Cover cheese with the caramelized mushrooms.
Butter the 2nd slice of bread butter and place butter side up on the mushrooms.
When the bottom of the sandwich is toasted, flip the sandwich and toast the other side.

English Grilled Cheese Sandwich

2 slices of rye bread
Sharp cheddar cheese (choose as soft a cheddar as possible)
Caramelized onions

Caramelized onions
 Slice onions (Vidalia are a good choice if available) 1/4th inch thick.
Pour extra virgin olive oil into a skillet and heat over high heat.
When the oil starts to smoke place a single layer of onions into the pan.
Cook for 2 minutes without disturbing them until they start to caramelize on the bottoms.
Turn onions and cook for about 5 minutes.
Remove from heat and set aside while you prepare the sandwich.

Butter one slice of bread and place it butter side down in a skillet that is heated to medium heat.
Place slice(s) of Cheddar cheese on the bread.
Cover cheese with the caramelized onions.
Butter the 2nd slice of bread butter and place butter side up on the onions.
When the bottom of the sandwich is toasted, flip the sandwich and toast the other side.

You can heat a little Au Jus for dipping.

Asian Grilled Cheese

2 slices of multi-grain bread
Gouda cheese
Mango or Chinese pear
Sesame sticks

Butter one slice of bread and place it butter side down in a skillet that is heated to medium heat.
Place slice(s) of Gouda on the bread.
Cover cheese with thin slices of Mango or Chinese pear.
Sprinkle with sesame sticks.
Butter the 2nd slice of bread butter and place butter side up on the fruit slices.
When the bottom of the sandwich is toasted, flip the sandwich and toast the other side.
You can sprinkle with soy sauce if desired.

Southwestern USA Grilled Cheese Sandwich
 
2 Slices of Sourdough Bread
Pepper Jack Cheese
Warmed up left over taco meat
Salsa

 
Butter one slice of bread and place it butter side down in a skillet that is heated to medium heat.
Place slice(s) of Pepper Jack on the bread.
Cover cheese with warmed up taco meat.
Butter the 2nd slice of bread butter and place butter side up on the taco meat.
When the bottom of the sandwich is toasted, flip the sandwich and toast the other side.
You can dip in salsa for a great treat!

French Grilled Cheese Sandwich   

2 slices of French bread
Gruyere cheese
Ham slices (thin)
Dijon mustard

Butter one slice of bread and place it butter side down in a skillet that is heated to medium heat.
Place slice(s) of Gruyere on the bread.
Cover cheese with ham slices.
Butter the 2nd slice of bread butter and place butter side up on the ham slices.
When the bottom of the sandwich is toasted, flip the sandwich and toast the other side.
You can spread a small amount of Dijon on the top of the sandwich for added zest!

Sloppy Joes

2 lbs. lean ground beef
½ C. chopped onion
½ C. chopped green pepper
½ C. ketchup
½ C. chili sauce
1/8 tsp. pepper
1 tb. vinegar
1 tsp. brown sugar
10 drops Tabasco sauce
1 C. chopped celery
½ C. water

Brown the ground beef in a hot skillet.
Drain the grease.
Add onion, celery, green pepper and continue to heat at a medium heat until beef is cooked through.
Add ketchup, chili, pepper, vinegar, brown sugar, water, and Tabasco sauce.
Simmer for 30 minutes.
Serve in hamburger buns with grated pepper jack cheese.

Meatloaf

3 lb. ground beef
2 eggs
1 tsp salt
1 tsp pepper
1 onion, finely chopped
2 C bread crumbs
1 C milk
1/3 C ketchup
1 tsp Worcestershire sauce

Mix all of the ingredients together in a large bowl.
Shape into a loaf.
Place on a rack in a pan.
Bake for 30 minutes at 350 degrees or until meat is coked all of the way through.

Special Barbecue Burgers

2 lbs. ground beef
1 C. bread crumbs
1 egg. Slightly beaten
2 tsp salt
½ tsp pepper
1 C. milk
3 tb chopped parsley
3 Tb chopped onion

Combine the ingredients and form into 8 large patties.
Make an indentation in the center.
Cook thoroughly over a grill.
Remove to a plate and place a piece of cheddar cheese in the indentation in each burger.
Cover burgers with foil and allow the cheese to melt.
Serve on a rye bun with caramelized onions.
Yum!

Gracie’s Damned If I Know Sandwiches
1¼ pounds of lower-fat ground beef
1 medium onion, finely chopped
1 tablespoon finely chopped parsley
1 can mushroom soup
½ cup sliced stuffed green olives
½ cup shredded American cheese
Butter
8 hard rolls - Panera Bakery's are very good for this recipe
Saute the ground beef and onions. Turn off heat and stir in parsley, soup, olives, and cheese.
Cut off tops of rolls and scoop out centers. Save centers and tops for another use. Spoon meat mixture into the rolls. They will be very full. Dot with butter.
Bake 20 minutes in 350-degree oven.

Baked Red Snapper

1 5 lb. cleaned and boned red snapper
1 tsp salt
1 lb. boiled shrimp
1 egg
1 C. cream
½ Tb. anchovy paste
Pepper
Paprika
1 C. sherry

Wash and drain the fish.
Rub the fish with salt.
Put the shrimp through a grinder.
Beat the egg and ½ the cream together.
Mix shrimp and anchovy paste together and season with the pepper, salt, and paprika.
Stir in the beaten egg and cream, adding the sherry and mixing it into a smooth paste.
Place the shrimp mixture into the fish as a stuffing and sew the fish together with clean string.
Place the fish in a baking dish and pour the remaining cream over it.
Bake at 350 degrees for about 4 hours or until done.
Serve garnished with cucumber slices in French Dressing.

Hamburger Steak smothered in Onions

1 lb. ground sirloin
½ C. water
1 tsp. salt
¼ tsp. pepper
¼ C. Dry bread crumbs
4 med. onions sliced
1 jar beef gravy

Mix hamburger, salt and pepper together
Shape into 4 large patties
Brown on one side and turn
Add onions and brown lightly
Add gravy, cover and simmer over low heat.

You can have a little fun with this recipe by adding carrots,
slices of potato or turnips at the same time you add the onions.

Baked Stuffed Pork Chops

4 pork chops 1 ¾ inches thick

Slice crosswise to the bone forming a pocket for the stuffing

For coating -
½ C. cracker crumbs
2 beaten eggs

For stuffing -
* ½ C. stale bread crumbs
¼ C. melted butter
1/8 tsp fresh cracked pepper
1/3 C. thinly chopped onion
½ C. hot water
 
* Mix all the above ingredients together adding the hot water last
 and stuff into the pocket in each pork chop.

Press the edges together and dip the chop into the cracker crumbs,
then into the egg mixture, and into the cracker crumbs.

Bake for 40 minutes at 350 degrees.
Turn once during baking.

Sloppy Joes with Sweet Baby Ray’s BBQ Sauce

¼ lb ground round per sandwich
1 Vidalia onion chopped
1 sweet green pepper chopped
1 bottle Sweet Baby Ray’s BBQ sauce
1 package large hamburger rolls
Grated sharp cheddar cheese

Brown the ground sirloin
Add the onion and green pepper and allow to cook for about 10 minutes
Pour off all grease
Add the bottle of Sweet Baby Rays and cook over low heat for 10 to 15 minutes.
Spoon onto large hamburger rolls and top with grated cheddar cheese
Serve with pickles, chips, coleslaw, potato salad, Macaroni salad or whatever your heart desires.

This is a quick and easy summer supper that everyone will love.
